Toad in a Hole

Quick and easy breakfast idea:


I think my mom used to do this, and my kids love it. The best part is the buttered, toasted middle. Lightly butter both sides of the bread and then use a biscuit cutter to cut a circle from the center. Place them both, separately into a hot frying pan and add just a drop of olive oil in the middle so the egg won't stick and then crack the egg right into the hole. Cook it, flip it, eat it. I serve it with some fruit on the side.

  1. Yeah..mom totally made those. Noah and Jonah enjoyed them immensely..and the crispy buttered center is, by far, the best part. But I'm chubby so of course I say that.

    We'll have to try that using our pumpkin cookie cutter for making the hole. I have a feeling it will be a hit.

  7. Yum! Another name I've heard is "eggs in a basket." It'd be interesting (at least, to the linguist in me) to see what different people call it, and whether that's influenced by geography, parentage, or whatever else!

  10. We had these for dinner the other night. And we call them the same thing, but I have heard them called other things as well. :)
